Banana & Choc Chip Muffins

Having two young boys and both are cricket player, our summer weekends are usually is a big family picnic day. These muffins are the break time faves. I whip them up on night before and ready to go in the morning. Quick, easy and delicious treat for morning tea times.


BEST part of this recipe is you can mix everything in one bowl. ( hey! don't we love that)

You won't need a mixer too.


Flavour is the best if you can use over-ripe bananas, so no more throwing away browning bananas.


Prep time 10 minutes

Cook time 30 minutes (approx.)

Serve 12 muffins (Small cases) 10 muffins ( large cases)

INGREDIENTS

  • 2-3 over-ripe bananas, mashed

  • 1/3 cup melted butter,

  • 1 teaspoon baking soda

  • Pinch of salt

  • 1/2 cup brown sugar (you can replace with granulated sugar if you prefer muffins are lighter in colour)

  • 1 egg, lightly beaten

  • 1 teaspoon vanilla extract

  • 1 1/2 cups plain/all purpose flour

  • 100 g baking chocolate chip bits (I use Cadbury or Aldi brand)



METHOD


  1. Preheat oven to 175 c and place 12 (use 10 cases if you use large cases and you would like larger muffins) muffin cases into a muffin/cupcake tray.

  2. In a large mixing bowl, mash bananas with a fork and mix with melted butter.

  3. Add baking soda, salt, sugar, beaten egg and vanilla extract all at once and STIR STIR STIR.

  4. Finally mix in the flour, just until combined. DO NOT OVER MIX. It's okay if it's a little lumpy. Pour your choc chip bits in and mix until combined.

  5. With a cupcake scoop or an ice cream scoop, scoop and fill your muffin cases 3/4 full.

  6. I usually sprinkle muffin tops with some brown or granulated sugar before placing them in the oven. Caramelised sugar gives them yummy flavour and smell amazing. So go ahead and sprinkle!

  7. Bake for about 30 minutes (depending on your ovens temp setting) mine takes about 30 min fan forced. Or toothpick test comes out clean.

  8. Remove your muffins from the oven and let it sit in the tray for 5 minutes before transferring onto cooling rack.
